Crockpot Sausage Kale Stew w/ Mashed Potatoes

CROCKPOT SAUSAGE KALE STEW w/ MASHED POTATOES😍

My #1 tip for meal prep: let your crockpot do the work for you! One of those dump it, set it, and forget it recipes, perfect for healthy meals all week long! My family has been making versions of this for years, but my godmother’s and mom’s recipe are my favorite. I tweaked theirs a bit to make a Whole30 version, and the result is a super flavorful sausage kale stew with the easiest mashed potatoes. You’re gonna love this one!



Serves 4.

Ingredients:

For the Slow Cooker Sausage Kale Stew:

  • 1 lb hot Italian sausage

  • 1 onion, chopped

  • 2 tbsps tomato paste

  • 2 cloves minced garlic

  • 1 14.5oz can fire roasted diced tomatoes

  • 2 cups kale, de stemmed and chopped

  • 2 cups chicken broth

  • ¼ cup sundried tomatoes

  • 3-4 large red potatoes, quartered

  • 2 tbsps ghee or butter

  • ¼ cup non-dairy unsweetened creamer (I like Original Nutpods)

  • 1 tbsp olive oil

  • Salt and pepper to taste



Directions:

For the Crockpot Kale Sausage Stew:

  • You can skip this first step and just add everything to the slow cooker, but the flavor and texture is better when you brown the meat and onions first. 

  • Heat a large skillet on medium high heat and drizzle in the olive oil. Remove the casings from the sausages, but keep them intact. Add them to the skillet and cook for 2-3 minutes or until golden brown on one side.

  • Flip and add in the onions, using a wooden spoon to crumble the meat. 

  • Cook for 4-5 more minutes until all the sausage is crumbled and the onions are soft. Add in the garlic and tomato paste and cook for an additional minute until well distributed.

  • Transfer to a slow cooker with the diced tomatoes, sundried tomatoes, potatoes, broth, and kale and mix. Season with salt and pepper to taste (go easy on the salt as the sausage is quite salty - you can always add more at the end).

  • Cook on high for 3-4 hours or low for 6-7 until the potatoes are tender.

  • Transfer the potatoes to a bowl and mash with ghee or butter, creamer, and about ¼-½ cup of the liquid from the pot. Season with salt and pepper and taste to adjust seasonings.

  • Serve the mashed potatoes with the stew over top. Enjoy!
