Crockpot Chicken Enchilada Soup

CROCKPOT CHICKEN ENCHILADA SOUP😍

It’s getting to that time of year where it just feels like there’s not enough hours in the day to get everything done, so crockpot dinners have been where it’s at! Just dump the ingredients in your crockpot, set it and forget it until it’s time for dinner, and you’ll have a delicious meal ready chock full of flavor without a huge ingredient list!


Serves 4-6.

Ingredients:

For the Crockpot Chicken Enchilada Soup:

  • 1 small diced onion

  • 2 large boneless skinless chicken breasts

  • 1 14oz can drained and rinsed black beans

  • 1 ½ cups frozen corn

  • 1 14oz can fire roasted diced tomatoes (with green chilies preferred, like Rotel)

  • 1 1/2 cups enchilada sauce (12oz)

  • 3 cups chicken broth

  • 1 tsp garlic powder

  • ½ tsp cumin

  • Juice from 1 lime

  • ¼ cup cream cheese (optional)

  • 1 tbsp olive oil

  • Salt and pepper to taste

Serving suggestions:

  • Crushed tortilla chips or fritos

  • Shredded cheese

  • Cilantro 

Alternate suggestions:

  • You can bulk up the veggies for this by adding in bell peppers, zucchini, or your preferred vegetable. Feel free to skip the chicken and swap out the broth for veggie broth to make this vegetarian too!


Directions:

For the Crockpot Chicken Enchilada Soup:

  • Heat a skillet on medium heat and add in the onions, garlic powder, cumin, and salt and pepper. Cook until soft, about 5-6 minutes. You can skip this step and add the onions straight into your crockpot, but I prefer the texture of softer onions. 

  • Add the onion mixture to your crockpot with the chicken breasts, black beans, frozen corn, diced tomatoes, enchilada sauce, chicken broth, and a pinch of salt and pepper to taste.

  • Cook on high for 3-4 hours or low for 5-6. Remove the cream cheese from the fridge and allow it to come to room temperature.

  • Remove the chicken breast and shred, then add back into the slow cooker with the cream cheese, stirring often to avoid clumping. If your cream cheese does clump, just keep stirring until smooth.

  • Once smooth and the cream cheese is incorporated, add in the lime juice and taste to adjust for seasoning.

  • Serve with desired toppings and enjoy!
