Watermelon Paloma

WATERMELON PALOMA😍

If y’all like margaritas you’re gonna LOVE this recipe, just in time for Cinco de Mayo! Super refreshing, super addicting, and extra hard not to have 3-4 on a weeknight😉 you’re gonna wanna make this ASAP! Recipe below👇🏾

Note:

  • A traditional paloma is made with tequila, lime juice, and a grapefruit-flavored soda like Jarritos. Given grocery stores are loaded with juicy watermelons these days and they are by far my favorite fruit, I just love the watermelon/lime combo in this!

  • Fresh watermelon juice is best for this! Tips on how to cut a watermelon and turn it into juice below! If your watermelon is not at peak and not quite sweet enough, feel free to add simple syrup or preferred sweetener of choice.

Serves 1.

Ingredients:

For the Watermelon Paloma:

  • 2 oz tequila (Casamigos preferred)

  • 3 oz watermelon juice

  • 2 oz club soda, watermelon or lime Spindrift, or lime flavored Jarritos

  • .5 oz lime juice

  • Ice

For the Rim*:

  • Lime zest

  • Lime wedge

  • Salt

*You can also use Tajin

Directions:

For the Watermelon Juice:

  • Cut a watermelon in half hamburger style (with the ends still intact).

  • Lay half of the watermelon cut side down on a cutting board. Holding onto the end to stabilize it, take your knife in a backwards C shape, curving the knife along the rind of the watermelon. It’s okay if you don’t get all the rind, you can come back to it later.

  • Repeat, continuously turning the watermelon until the rind has been cut off.

  • Cut off the end at the of the watermelon.

  • Cut the watermelon into a grid shape, then turn the watermelon sticks on their side and cut into chunks.

  • Add watermelon chunks to a blender and blend until pureed.

  • Place a bowl or pitcher in the sink and place a fine mesh strainer on top.

  • Strain the watermelon juice and discard the pulp.

  • Reserve in the fridge as you work on your Paloma.

For the Watermelon Paloma:

  • Run the lime wedge along the rim of a glass.

  • Add the lime zest and salt to a plate, then coat the rim of the glass in the lime salt mixture.

  • Add ice to the glass and top with tequila, watermelon juice, lime juice, and club soda.

  • Stir and serve, enjoy!
