What do you do when Cinco de Mayo is on Tuesday? You make some carne asa(duh) 😉 Ok I swear this recipe is better than my jokes 😂 Super easy to make, PACKED with flavor, and a crowd pleaser (even if it’s just you). Tips:

  • The marinade for this is EVERYTHING. It’s really simple to throw together, and is where the carne asada tenderizes and gets all its flavor so don’t skip this step! Overnight marinating is great, but 2 hours minimum.

  • Flank steak is tender when it’s medium rare. If it’s overcooked it can get tough since there’s not a lot of fat. So be sure not to overcook!

  • This recipe is super versatile - have the carne asada as is, or in tacos, on fries, in a burrito or quesadilla, the opportunities are endless!

  • Honey is a bit controversial in marinades, so if you’re barbecuing over fire feel free to omit if you’re concerned with flare ups. I actually welcome them since it allows for a nice char on the outside.

Ingredients:

For the Carne Asada:

  • 1.5 lb flank steak

  • Juice 3 oranges (½ cup)

  • Juice from 3 limes

  • 1 lemon

  • 1 tbsp soy sauce (sub for Coconut Aminos for Whole30)

  • 4 cloves minced garlic

  • ¼ cup olive oil

  • ¼ cup chopped cilantro, leaves and stems

  • 1 tsp cumin

  • 1 tsp dried oregano

  • 1 tbsp honey (omit for Whole30)

  • Salt and pepper to taste

For the Simple Guacamole:

  • 1 small avocado, mashed

  • 1/2 lime

  • Garlic salt to taste


Directions:

For the Carne Asada:

  • Whisk together orange juice, lime juice, lemon juice, olive oil, cilantro, oregano, cumin, soy sauce, garlic, and honey.

  • Reserve ¼ cup of marinade and reserve.

  • Pour the rest over the steak in a ziploc bag. Seal and marinate 2 hours to overnight.

  • Remove steak from the fridge 20 minutes before barbecuing.

  • Discard the marinade and pat the steak dry with paper towels.

  • Heat a grill or cast iron pan to high heat and oil the grates or drizzle in some avocado oil.

  • Season the steak with salt and add to the grill or cast iron and sear untouched for 6 minutes.

  • Flip and cook for another 6 minutes for medium rare.

  • Remove and rest for 7-10 minutes.

  • Slice thinly against the grain and pour over the reserved marinade.

  • Serve as is, in tacos, on fries, in a burrito or quesadilla, whatever you prefer!
