Paleo Cookie Dough Bites

PALEO COOKIE DOUGH BITES😍

Hey you.. Looks like you could use a little bit of a pick me up right now. I’ve got you covered with about 15 little bite-sized pick me ups that take literally no time at all. Naturally sweetened, gluten-free, vegan, AND paleo, so you can still feel pretty good after eating 4.. Or 7? Really, these are so easy and so good, you’re gonna wanna make these ASAP!



Makes about 10-15 cookie dough balls.

Ingredients:

For the Paleo Cookie Dough Balls:

  • 1 cup almond flour

  • 1 tbsp coconut flour

  • ½ cup unsweetened almond butter

  • 3 tbsps coconut oil

  • ¼ cup maple syrup

  • ½ tsp vanilla extract

  • 2 tbsps coconut milk

  • ¼ tsp cinnamon

  • Pinch of salt

  • ¼ cup paleo chopped chocolate or chocolate chips

For the Chocolate Drizzle:

  • ½ cup paleo chocolate

  • 3 tbsps coconut oil

  • Flakey Maldon sea salt flakes



Directions:

For the Paleo Cookie Dough Bites:

  • Add almond butter, coconut oil, maple syrup, vanilla extract, cinnamon, and coconut milk to a bowl and mix until well combined.

  • Mix in the almond flour, coconut flour, and a pinch of salt and mix with a rubber spatula.

  • Stir in the chocolate and freeze for 5 minutes.

  • Form the cookie dough into 2 tbsp sized balls and add to a plate. It’s easiest to use a cookie dough scoop for this, like the one I linked here. Freeze for 10-15 minutes to set.

  • Add paleo chocolate and coconut oil to a bowl. Microwave for 1 minute and 30 seconds, removing from the microwave to stir every 30 seconds until melted.

  • Drizzle over cookie dough bites, add back to the freezer for 5 minutes until set. Sprinkle with flakey sea salt and enjoy!

  • If you somehow happen to not eat all in one sitting, I recommend storing in the freezer!
