Healthy Paleo Granola

HEALTHY PALEO GRANOLA😍

Odds are, you guys are probably going to go nuts over this healthy granola 😉 I’ve been on a big smoothie and yogurt bowl kick in the mornings lately, and have been making this Paleo Granola on repeat to add some extra healthy fats and protein to my bowls. It’s paleo, grain free, and naturally sweetened with only 2 tbsps maple syrup, but still the perfect touch of sweet nuttiness to my breakfast bowls. Great for meal prep for easy breakfasts all week long too, you’re gonna love this one!



Serves 4-5.

Ingredients:

For the Healthy Paleo Granola:

  • 2½ cups unsalted nuts (I used pecans, cashews, almonds, and pistachios)

  • ½ cup coconut flakes

  • ¼ melted coconut oil

  • 2 tbsps maple syrup

  • ½ tsp cinnamon

  • ½ tsp salt

Serving Options:

  • Yogurt bowl with berries (I used the Almond Milk yogurt from Trader Joe’s)

  • With almond milk and fruit

  • On top of a smoothie bowl



Directions:

For the Healthy Paleo Granola:

  • Preheat the oven to 325 degrees.

  • Chop the nuts until crumbled but not ground, you want some chunks still.

  • Add the nuts, coconut flakes, coconut oil, maple syrup, cinnamon, and salt to a bowl and mix well with a rubber spatula until well combined. 

  • Add parchment paper to a baking sheet and spread the granola out on the baking sheet, flattening to spread out.

  • Bake at 325 degrees for 12 minutes, then chill at room temperature for 5 minutes, then transfer to the freezer for 10 minutes. Do not break up the granola until it has fully cooled - this will allow it to get those nice chunks.

  • Serve or store in the fridge in a ziplock or airtight jar for up to 2 weeks and enjoy!
