Perfect for a quick dinner or for an easy lunch, this Satay inspired noodle bowl is ready in 10 minutes and is great vegetarian or with some leftover rotisserie chicken. Serves 2-3.

Ingredients:

For the Satay Inspired Peanut Noodles:

  • 8oz noodles (I used brown rice Pad Thai noodles to make this gluten-free, but you can use any noodles)

  • 2 cups shredded carrots

  • 2 cups shredded cucumber

  • 2-3 cups rotisserie chicken (optional)

  • ½ cup peanut butter

  • 1/4 - ½ cup coconut beverage (not the coconut milk from a can)

  • Juice from 1 lime

  • 2 tbsps hoisin sauce

  • 2 tbsps soy sauce or tamari

  • 2 tbsps fish sauce (optional - substitute for a pinch of salt for vegetarian)

  • 1-2 tbsps sriracha

  • Peanuts, cilantro, and lime wedges for serving


Directions:

For the Satay Inspired Peanut Noodles:

  • Start by bringing a pot of water up to boil. Add your noodles and cook to package instructions.

  • In a large bowl, combine the peanut butter, coconut milk, lime juice, hoisin sauce, soy sauce, fish sauce (if using), and sriracha. Add more coconut milk or water depending on preferred consistency.

  • Add the shredded chicken (is using), carrots, cucumbers and cooked noodles and stir to combine. Serve at room temperature and enjoy!😋
