Easy Romesco Sauce

Grilled Veggies w/ EASY ROMESCO SAUCEšŸ˜

The sauce that will brighten up and add SO much flavor to whatever's on your dinner table. A ā€œdump everything into a blender and let it rideā€ sauce that will be the perfect accompaniment to your roasted veggies, fish, chicken, potatoes, etc. I also included a time table of exactly how long to grill the veggies if youā€™re still making the most of grilling season! Youā€™re gonna love this one!

Romesco is a tomato and red pepper based sauce originating from Tarragona, Spain. Ingredients vary based on region, but my personal favorite are the combos of flavors between the peppers, tomatoes, garlic, and smoked paprika. For a more rustic flavor, use a mortar and pestle, or do a quick blitz in the blender for ease. 


*Makes about 1Ā½ cups of sauce and lasts for 1 week in the fridge.

Ingredients:

For the Easy Romesco:

  • 12oz jar roasted peppers

  • 2 Roma tomatoes

  • Ā½ cup whole almonds

  • Ā½ cup olive oil

  • 1 tbsp red wine vinegar

  • 1 tbsp lemon juice

  • 1 tsp smoked paprika

  • Salt to taste 


Directions:

For the Easy Romesco:

  • Add all ingredients to a blender and blend until smooth. Taste to adjust seasonings.

For the Grilled Veggies:

  • Coat all your veggies with olive oil and salt (I used Portobello, zucchini, squash, and corn).

  • Preheat your grill to medium high heat and grease the grates.

  • Add the Portobello mushrooms, zucchini, and squash to the grill and cook for 8 min, flipping halfway. Add the corn 2 minutes in and cook for a total of 10 minutes, turning every few minutes.

  • Serve with the Romesco sauce and enjoy!
