Favorite Spiced Salmon

FAVORITE SPICED SALMON

Been making this easy salmon recipe on repeat - it uses a similar seasoning as my grandma’s roast chicken recipe and is just loaded with flavor. I served it with smashed potatoes, but it tastes great with rice and some roasted veggies too. Enjoy!


Serves 2.

Ingredients:

For the Spiced Salmon:

  • 2 salmon filets

  • ½ tsp ground coriander

  • ½ tsp smoked paprika

  • ¼ - ½ tsp red pepper flakes (depending on spice preference)

  • ½ tsp ground fennel (optional) - I grind my own in my coffee grinder

  • 1 small clove garlic, grated

  • 1 tsp orange zest

  • 1 tsp lemon zest

  • 1 tsp orange juice

  • 1 tsp lemon juice

  • 1 tbsp olive oil

  • Salt to taste

Serving Suggestions:

  • Rice or roasted potatoes

  • Roasted veggies like asparagus or broccoli or a side salad


Directions:

For the Spiced Salmon:

  • Preheat the oven to 400 degrees.

  • To a small bowl, add the coriander, fennel, smoked paprika, red pepper flakes, grated garlic, orange zest, lemon zest, orange juice, lemon juice, olive oil, and a pinch of salt. Mix to make a paste.

  • Place the salmon on a parchment paper lined baking sheet and rub with the marinade (don’t skip the sides!). Bake the salmon at 400 degrees for 12 minutes or until it flakes easily.

  • Serve with rice or potatoes and veggies and enjoy!
