Italian Pasta Salad

ITALIAN PASTA SALAD😍

Considering my house is already a sauna, I don’t need my food to give me a steam facial right now, which is why I’ll be eating this pasta salad alllll summer long. Loaded with fresh ingredients, full of flavor, and made healthier with a homemade Italian dressing and gluten free pasta. You’re gonna wanna make this ASAP!

Serves 5-6.

Ingredients:

For the Italian Pasta Salad:

  • 12 oz penne or fusili (I used Jovial brown rice pasta found here)

  • Small can sliced black olives (approx. 3.8 oz)

  • 5 oz cherry tomatoes, sliced (about 1 cup)

  • 8 oz mozzarella balls

  • 5 oz dry cured salami, cubed

  • ½ cup olive oil 

  • ¼ cup white or red wine vinegar

  • Juice from 1 small lemon

  • 1 tsp Dijon mustard

  • 1 tsp italian seasoning (or a combination of dried basil and parsley)

  • ½ cup chopped fresh basil

  • 1 grated garlic clove or ½ tsp garlic powder

  • Salt and pepper to taste


Directions:

For the Gluten Free Pasta Salad:

  • Add salted water to a pot and bring to a boil. Add pasta and stir. Cook according to package instructions. Drain and rinse well until cool to the touch.

  • In a large serving bowl, whisk the olive oil, vinegar, lemon juice, dijon mustard, Italian seasoning, garlic, salt and pepper until well combined.

  • Add the pasta, olives, cherry tomatoes, mozzarella balls, salami, and basil and toss. Serve and enjoy!

  • Note: this can easily be made ahead, just take it out of the fridge 15-20 minutes before serving to allow it to come to room temperature.
