This delicious weeknight pasta recipe comes together in minutes with just a few ingredients and can be adapted to whatever you have on hand. Canned goods aisle got ransacked at your grocery store? Make this with fresh! Stocked up on pantry items? You can use those too! You’re gonna wanna make this ASAP😋

Other ingredients/options to add to this can be:

  • Grilled zucchini or eggplant

  • Sundried tomatoes

  • Jar of roasted red peppers

  • Canned tuna

  • Frozen veggies

Serves 4-5.

Ingredients:

For the Greek Pasta Salad:

  • 2 cups dried pasta

  • 1 cup cherry tomatoes (or 1 can diced tomatoes, drained and rinsed)

  • ½ cup chopped kalamata olives

  • 1 cup jarred or frozen grilled artichoke hearts

  • 1 cup chopped cucumber (optional)

  • ½ cup feta cheese

For the Dressing:

  • ¼ cup olive oil (pro tip: use the oil from the jar of artichokes)

  • 3 tbsps red wine vinegar (pro tip: use the marinade from the jar of olives)

  • Juice from 1 lemon

  • ½ tsp dried oregano

  • 1 tsp grated garlic

  • 1 tsp dijon mustard

  • Salt and pepper to taste

Directions:

For the Greek Pasta Salad:

  • Bring a pot of salted water to boil. Add pasta and cook according to package instructions. Drain and rinse to cool.

  • In the bottom of a large bowl, whisk together the dressing ingredients.

  • Add cherry tomatoes, cucumbers, kalamata olives, artichokes, feta, and pasta to the bowl and mix to combine. Taste and adjust seasoning.

  • Serve cold or at room temperature and enjoy!
