Elote Inspired Shrimp Tacos

ELOTE INSPIRED SHRIMP TACOS😍

I think one of my favorite meals on the planet is a good shrimp taco and we all know the flavor bomb that is elote, so why not combine the two? Juicy spiced shrimp, creamy avocado, with the BEST elote inspired corn topping, you will want to eat 100 of these!

Note: If you don’t have the individual spices listed below, feel free to use what you have or sub for 1 tbsp of taco seasoning.

Serves 2.

Ingredients:

For the Shrimp Tacos:

  • ½ lb small-medium shrimp

  • 2 tbsps olive oil

  • ½ tsp smoked paprika

  • ½ tsp paprika

  • ½ tsp cumin

  • ½ tsp chili powder

  • ½ tsp garlic powder

  • Salt and pepper to taste

  • Juice from 1 lime 

  • 1 large avocado

  • 4 corn or flour tortillas

  • Hot sauce to taste

For the Elote Corn Topping:

  • 1 cup frozen corn, defrosted

  • 2 tbsps plain greek yogurt or sour cream

  • 2 tbsps mayonnaise 

  • 2 tbsps cotija cheese

  • 1 tsp tajin or chile lime seasoning + more to taste

Directions:

For the Elote Shrimp Tacos:

  • If your shrimp is large, cut into bite sized pieces. Add shrimp to a bowl with 1 tbsp olive oil, smoked paprika, paprika, cumin, chili powder, and salt and pepper to taste. Marinate while you prep the rest of your ingredients.

  • If you can’t find frozen roasted corn, char the corn in a cast iron skillet for a few minutes to get some color and charred flavor. Add corn to a bowl with greek yogurt, mayonnaise, cotija, and tajin. Taste and adjust seasonings.

  • Mash your avocado with the juice from ½ lime and a pinch of salt.

  • Toast your tortillas 30 seconds per side in a dry skillet and set aside.

  • Get a cast iron skillet or similar to medium high heat. Once hot, add in 1 tbsp of olive oil and add the shrimp in a single layer. The shrimp should sizzle when it hits the pan. Cook for 1-2 minutes on the first side or until golden brown, then flip and cook for 30-60 more seconds depending on the size of your shrimp. Once cooked, the shrimp will be pink and the tail will curl. Season with the juice from the other half of the lime.

  • Add some mashed avocado to the base of each tortilla and top with shrimp and the elote corn salsa. Top with hot sauce to taste and serve immediately. Enjoy!
